SPECIAL HOLIDAY ITINERARY
Thursday Arrival:
- Welcome Reception and Cellar Tour with the aromas from the Bakery before a Special Valentine’s 5-Course Wine-Pairing Dinner at The Farm’s fine-dining restaurant, Cheyenne Club.
Friday Morning:

Begin your day with Mochas and Chocolate Croissants before embarking on your own chocolate truffle creations.

Learn how to make ganache fillings and start making your desired flavor from a selection of salted caramel bourbon, dark chocolate, ice wine, and espresso.
Friday Afternoon:

Chef Keisha will walk you through different chocolate tempering techniques.

Select two or three of your favorite molds to create from a selection of 60 different sizes and shapes.

Learn how to decorate your molds by hand-painting them with cocoa butter.

Indulge in a tasting of decadent chocolate truffles paired with 4 dessert wines to finish the first day.
Saturday Morning:

Start your second day of truffle making by properly tempering your chocolate.

Learn the patience of creating a perfectly layered truffle by coating your molds.

Experience the hands-on process of filling your molds with the ganache of choice.
Saturday Afternoon:

After a gourmet farm lunch is the big reveal you’ve been waiting for!

First, you will retemper the chocolate and cap your molds.

Unmold your creations to inspect your chocolate work of art!

Cut one of your truffles to examine the layers. Evaluate the thickness and evenness of the shell and capping.

Finalize your plating or box presentation and enjoy tastings along with a champagne toast.

Saturday Evening:
